Belgian Waffles: GF & Vegan

Want an easy waffle recipe, that’s healthy but STILL DELICIOUS? Your girl has you covered. Waffles are one of the best breakfast foods on earth, and you can still enjoy them no matter what your eating preference is.

Anyone else think of this quote when they’re making waffles?

I literally say this to myself while I make them!

There’s nothing better than a fresh warm waffle covered in fruit & syrup. I love this recipe so much because it’s satisfying and filling without making me feel overly-stuffed and heavy. It incorporates flax seed, which will give you a dose of fiber & omega 3’s, and has a subtle crunchy texture on the outside, but is soft & chewy on the inside.

Making these waffles is SUPER EASY because you mix the wet ingredients first, then while that’s sitting you mix the dry ingredients. After 5 minutes you pour the flax mixture into the flour, stir for about a minute and BAM… waffle time.

I know a lot of people are hesitant to try GF & vegan recipes. Obviously they aren’t going to taste like the light & fluffy Belgian Waffles made with white flour, eggs & sugar, but I promise you’ll be pleasantly surprised & will look forward to making this recipe once you try it.

I love to top them with either fresh fruit, or some berry compote topping (recipe below), and a drizzle of maple syrup or sunflower butter.

Gluten Free Vegan Waffles

This Belgian waffle recipe is quick & simple, gluten-free & vegan, & packed with fiber & healthy omega 3's. It can easily be doubled to yield more & freeze for later.

Ingredients
  

  • 1.5 cup non-dairy milk
  • 1/4 cup melted coconut oil
  • 2 tbsp ground flax powder
  • 1 tbsp coconut palm sugar
  • 1 tsp vanilla extract
  • 2 cups gluten free flour blend
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Berry Compote Topping

  • 1 cup frozen mixed berries
  • 1/2 tbsp corn starch
  • juice from half an orange
  • 1/2 tsp orange zest

Instructions
 

  • Turn on waffle maker to desired temperature, then start getting ingredients together.
  • Whisk together milk, coconut oil, flax powder, coconut sugar, & vanilla. Let it sit for at least 5 minutes.
  • In a large bowl whisk together flour, baking powder, baking soda, cinnamon, nutmeg, & salt.
  • Slowly add wet ingredients to dry ingredients. Mix well until all ingredients are combined. (Over-stirring will result in a gooey-cake like batter)
  • Pour batter into your waffle maker and spread evenly throughout so entire surface is covered. Close waffle maker & cook until edges become golden brown. (Time will vary depending on type of waffle maker)

Berry Compote Topping

  • Add all the ingredients to small sauce pan & cook on low.
  • Let mixture simmer on low for about 15 minutes, stirring occasionally.
  • Pour on top of freshly made waffle & top with shredded coconut & maple syrup.

Notes

  • This recipe works best with a gluten free flour blend, coconut flour will NOT work.
  • This recipe yields 2 large Belgian Waffles, but could yield more depending on the size of your waffle maker.
  • Corn starch is used as a thickening agent for the compote. You can sub with tapioca starch or rice flour as well.
